Vegan Cooked Apples on a cold spring day

It’s still social distancing time, but we got out to the store today and picked up a few supplies. Obviously, first rule of shopping, don’t go in hungry, which we did. Went in for a couple of things and came out with half the store.

Anyhow, coming home with groceries prompted a quick clean out of expired stuff, and doing so, I noticed that I had some apples that could do with using up. So, I figured I’d cook them and post the recipe here.

I hope that you give this a try and enjoy! They’re a hit with my child and are completely vegan, or not, if you wish.

Here’s what you need:

* Saucepan and lid

* Apples- I used 4 here but you can have more or less. I used Gala and have found that red sweets are best to cook with, but you can give green a try, and will find them to be just as good, maybe a bit more bitter.

* 1/2 cup water

* 3-4 drops of extract. I’m using maple extract here, but vanilla works well too

* 1/2 cup of nuts. I’ve used walnuts and cashews before. These should be unsalted.

* A handful of raisins.

* 2 tablespoons of maple syrup. you can use less if you prefer, or none at all. For an non-vegan option use honey. For a sweeter option you can also use 1/2 tablespoon of brown sugar.

* 2 – 3 teaspoons of cinnamon.

Here’s what you do:

Peal the apples and add to the pot

Add water. About 1/2 cup should do but I am estimating. Put enough water to just cover the apples.

Add the raisins, extract, maple syrup, cinnamon and nuts.

Cook on high until the mix starts to boil. Stir ingredients and make sure the apples are covered in the Cinnamon.

Reduce heat to low and cook until syrupy. Stir regularly, the mix is ready when the apples are soft. To get that really syrupy mix leave the apples on low for about 15-20 minutes, but stir often.

I prefer mine with some yogurt (here is almond milk vanilla), but you can also serve with ice cream or heavy cream too; or none of these at all, whatever you prefer.
